Fall season is finally here! Though it may feel like the middle of summer here in NOLA, it’s still fun to act like fall has arrived. Fall means comfort food; we all know the classic  pumpkin pie. This fall, add some new pumpkin recipes to your cookbook like these favorites of mine!

1. Pumpkin Spice Latte

You will need: 1 cup coffee, ½ cup almond milk, 3 Tbs. pumpkin puree, 1 Tbs. coconut oil, ½ Tsp. vanilla extract, 1 Tsp. maple syrup, 1 Tsp. pumpkin pie spice

Put all of the ingredients in a blender and blend until smooth and foamy. I use my Nutribullet blender, but a Vitamix or other strong blender also works to give you the Starbucks vibe with a homemade feel.

2. Pumpkin Pie Smoothie Bowl

You will need: 1 and ½ frozen bananas, ½ cup pumpkin puree, ¾ cup almond milk, 1 Tbsp. almond butter (can use PB as well), 2 dates (pitted), 1 Tsp. pumpkin pie spice

Toppings: dried cranberries, pecans, bananas, chia seeds, pumpkin seeds, granola, chopped apples, walnuts, cinnamon

Put all of the ingredients into a blender and blend until you achieve a smooth texture. The best part: you can pick whatever toppings you want and spend way too much time arranging them so it’s totally Instagrammable!

3. Pumpkin Pie Overnight Oats

You will need: 1/3 cup rolled oats, 1/3 cup pumpkin puree, 1/3 cup almond milk, 1 Tsp. chia seeds, ½ Tsp. cinnamon, ¼ Tsp. nutmeg, 1 Tsp. maple syrup

Toppings: chopped nuts (pecans, walnuts), maple syrup, chopped apples or pears, sunflower seeds

Combine all of the ingredients and mix well. Pour the mix into a mason jar or bowl and let it sit for at least five hours, so the oats can soak up the liquids. If the mixture is too dry, feel free to add more liquid and add the toppings at the end!
